DIY Friday: ch-ch-ch chocolate chia puddin’

Happy Friday!!!! Cannot believe it august 1st! Where has the time gone?! I don’t know about you, but I still have a lot of exciting things coming this year! One, being I’ll be doing a flash sale for Maude C. Mid-week next week on Instagram! So check out & follow me on there, username: @RynB

And 2, I’ll be in NYC in exactly 19 days! Eek! : ) So excited! Still have so much to do though! Sewing, packing, planning, oh my!

Now onto this DIY! Hopefully y’all are enjoying recipes just as much as DIYing clothing… I promise I’ll still put DIY’s for clothing on here too! Give it time!
Anyway, back to the ch-ch-chia pudding. I’ve wanted to try out chia pudding for awhile now, but just recently bought a bag of chia seeds. So I decided to make it and I’m so glad I did. It is very tasty.
(If your not accustomed to chia seeds, or know what they are, chia seed is a species of flowering plant in the mint family, Lamiaceae, native to central and southern Mexico and Guatemala. And it has a great supply of fiber & omega-3. And a whole bunch of added benefits just by consuming these little seeds.)

Back to how to make this puddin:
1/2 cup chia seeds
3 1/2cups almond or coconut milk
3Tbsp unsweetened cocoa powder
4-6Tbsp coconut sugar
And a medium large mason jar

You’ll add all of it in the jar, then you’ll tighten the lid and begin to shake it, until it’s thoroughly mixed. Then you’re going to want to want to refrigerate for at least 4hrs or overnight.
When you finally indulge in this pudding, it almost has a tapioca pudding texture, due to the fact that the chia seeds grow in size and have become gel like, with what seems like raspberry seeds in the middle. Don’t be alarmed at this description. I’m not doing it justice! It’s actually really good, I promise!

Also, you can garnish it with homemade whipped cream and mini chocolate chips.

And there you have it! Hope you enjoy!
Have a great weekend e’rybody! -Ryn

DIY Friday: yogurt quinoa

So, this week I’ve found out that I am allergic to oranges… Like totally allergic! And with course of finding out I had to eliminate a lot from my diet, as in coffee 😢, wheat, eggs, almost all dairy sugar & obviously oranges to pinpoint the allergy.
And not to say I do not miss the coffee or cream. But I have embraced a better, healthier way of eating!

All thanks to this quinoa concoction I came up with I can still enjoy my food!
Here’s the lowdown on how to make this:

1. Start off with Greek yogurt(I like to use plain the Greek God brand) in a bowl.

2. Add your berry or fruit of choice. (I’ve been on a blueberry kick)

3. Add your cooked quinoa.

4. Then crunch up some yummy pecans , and that to the mix. (This southern girl loves her pecans!)

5. Then add 2Tbs coconut oil, mini chocolate chips(I used enjoy life, since they are gluten free) & unfiltered honey.

6. Stir & enjoy!

It’s so so good!

Oh and I have to tell you, I used 1/4-1/3 cup of yogurt, quinoa & pecans. I’m not really sure how much I use, since I don’t even hassle with measuring cups! Hahaha!

So I hope y’all try it and enjoy it!

DIY Friday: GF corn pizza & favorite cookies

I’ve made this pizza twice and each time has been so good! Corn sounds a wee bit odd to be upon a pizza, but trust me, it’s so good! P.s. I don’t always follow a recipe to a tee, I consider recipes to be like suggestions. I have creative control, right?! ; )

What to gather for crust:
1 1/2 cups almond flour
1/4 tsp sea salt
1/4 tsp baking soda
1 Tbs melted butter
1 large egg

Preheat oven to 350 degrees. Set aside a large baking sheet. In large bowl, combine the almond flour, salt & baking soda. In medium bowl, whisk together cooled melted butter & egg. Stir the wet ingredients into the almond flour mixture until thoroughly combined.
Place dough in between two parchment paper pieces and roll into a 8-10″ circle or oval, 1/8″ thick. Remove the top piece of parchment paper with the rolled-out dough onto the baking sheet. Bake for 15-20 minutes, until lightly golden. Remove from the oven.

What to gather for the topping:
Corn pudding:
(Take a 16 oz. bag of corn in medium sauce pan with 2 cups water. Bring to boil. Separate corn from liquid. Add liquid back to the saucepan. Then Add two tablespoons cornstarch and quickly whisk in. Turn down heat. Then put 3 Tbs cream cheese & 3/4 tsp salt. And mix together. Turn off stove, then let cool. It should be prettying thick by now. )
1-2 cups corn kernels (use the kernels from the corn pudding.)
1/4 cup mascarpone or cream cheese
1/2 cup diced (1/8″) uncooked Turkey bacon
Red chile flakes
4oz Mozzarella cheese, shredded
Olive oil

Roll out the pizza crust onto a jelly roll pan or cookie sheet. 1/4″ or thinner. Bake the crust first.
Then you’ll want to spread the corn pudding onto the crust. Then spread the kernels on top. Add dollops of mascarpone cheese all over the pizza. Then sprinkle the bacon all over pizza. Add some red chile flakes.
Sprinkle the cheese all over pizza.
Drizzle olive oil all over pizza.

You’ll then place pizza in oven at 350 degrees Fahrenheit for 10-12 min. Or until cheese is melted. And it’s finished! It’s super yummy and pretty easy to make!

I then add a protein of some choice & a veggie. Hope you enjoy!

And for dessert, Gluten Free chocolate chip cookies! These cookie tast like the real deal! They taste a lot like real gluten induced cookies, but it’s all gluten free!!!

What to gather:
2 1/2 cups almond flour
1/2 tsp sea salt
1/2 tsp baking soda
3/4 cup Coconut sugar
1 egg
1/2 cup cooled melted butter
1 Tbs vanilla extract
1/2 cup chocolate chips

Preheat the oven to 350 degrees Fahrenheit. Line 2 large cookie sheets with parchment paper.
In a large bowl, combine the almond flour, sea salt & baking soda. Use a small saucepan and melt the butter. In medium bowl, whisk together the egg coconut sugar, melted butter & vanilla. Stir the wet ingredients into the almond flour mixture until thoroughly combined. Fold in the chocolate chips. Spoon the dough 1 heaping tablespoon at a time onto the prepared baking sheets, pressing down with the palm of your hand to flatten, leaving 2″ between each cookie. Bake for 7-12 minutes, until light golden. Let cookies cool on baking sheets for 15 minutes, then serve warm. So so yummy!

I based the pizza crust & cookies off of Elana’s recipes, but I totally tweaked them, since that’s what I do! : )
